Remove the pineapple’s top (including the leaves), bottom, and skin. Put the ginger and pineapple trimmings in a big saucepan. (Save the flesh of the pineapple for another use.) Bring water to a boil after adding. Cook, covered, for three hours on a low heat setting to maintain a moderate simmer.

Pour the mixture into a heatproof pitcher or a big bowl after passing it through a fine-mesh sieve (discard the solids). Give it about an hour to totally cool. Stir in the lime juice and piloncillo (or brown sugar) until the sugar is dissolved. Serve large glasses over ice.

Iced Tea

Lemon, raspberry, lime, passion fruit, peach, orange, strawberry, and cherry are just a few of the popular flavors that can be combined with it in flavored syrup.

To brew the tea, bring half the water to a boil in a pot and then turn off the heat. Add the tea bags and give them 10 minutes to steep.
